1. Heat sesame oil in a large pot over medium heat. 2. Add chopped onion, scallions, and minced garlic. Sauté until fragrant. 3. Add thinly sliced pork and cook until it's no longer pink. 4. Stir in the fermented kimchi and kimchi juice. 5. Pour in the beef bone broth and water. 6. Season with soy sauce, gochugaru (Korean chili flakes), and gochujang (Korean chili paste). Stir everything together. 7. Bring the stew to a boil, then cover and let it simmer for 10 minutes. 8. Uncover the pot and add the enoki mushrooms and sliced tofu on top. 9. Garnish with more chopped scallions. 10. Cover again and cook for another 10 minutes. 11. Serve hot with steamed rice.
