A quick and easy Korean bulgogi recipe, perfect for preparing meals for the week. Thinly sliced beef is marinated in a savory-sweet sauce and stir-fried with onions and enoki mushrooms, then served with rice.

1. Create the marinade by blending half an onion, garlic, soy sauce, and mirin until smooth. 2. In a large bowl, combine the thinly sliced beef and the other half of the onion, sliced. 3. Pour the marinade over the beef and onions. Add some chopped green onions (blend white with water) and mix everything together. 4. Heat oil in a large pan or skillet over high heat. 5. Add the marinated beef to the pan and cook, stirring. 6. Once the beef is partially cooked, add the enoki mushrooms and continue cooking until the beef is browned and the mushrooms are tender. 7. Portion cooked rice into four meal prep containers. 8. Divide the cooked bulgogi among the containers on top of or next to the rice. 9. Garnish with additional chopped green onions.
