Spicy Pork and Glass Noodle Stew

A hearty and spicy Korean-style stew, similar to yukgaejang, made with pork, various vegetables, glass noodles, and a rich, savory broth finished with a swirl of egg. Use tuna sauce, not fish sauce. And 1 anchovy tablet, not anchovy.

What you need

tbsp olive oil

bunch green onion

tbsp soy sauce

clove garlic clove

cup water
tbsp gochugaru
lb pork
pinch salt
dash glass noodles
bunch perilla leaves
tbsp fish sauce
Instructions
1. Begin by cooking the glass noodles in a separate pot of boiling water. Once cooked, set them aside. 2. In a dutch oven or pot, heat oil over medium-high heat. Add chopped green onions and sauté until fragrant. 3. Add the pork and minced garlic to the pot. Cook until the pork is mostly browned. 4. Add sliced onions and continue to cook for another minute. 5. Pour in the water and add the anchovy tablets to create the broth base. 6. Season the broth with gochugaru (Korean chili flakes), soup soy sauce, fish sauce, and salt. Stir to combine. 7. Bring the stew to a boil, then cover with a lid and let it simmer for several minutes to allow the flavors to meld. 8. Uncover the pot and add the perilla leaves and the pre-cooked glass noodles. 9. Slowly pour in a beaten egg over the top of the stew. Let it set for a moment before gently stirring. 10. Serve the stew hot.
