What you need

tbsp mirin
tbsp gochugaru

tbsp soy sauce

tbsp gochujang

tsp sesame seed

clove garlic clove

bunch spring onion

tbsp honey
Instructions
1. In a small bowl, prepare the sauce by mixing together garlic, soy sauce, mirin, gochugaru, gochujang, and honey. 2. Place the chicken thighs in a large pot or Dutch oven. 3. Pour the prepared sauce over the chicken. 4. Cover the pot and cook for 10 minutes. 5. After 10 minutes, cut the chicken into bite-sized pieces using kitchen shears. 6. Add the chopped onions, carrots, spring onion, potato, and Korean sweet potato to the pot. 7. Stir everything together to coat the vegetables in the sauce. 8. Cover the pot again and continue to cook until the vegetables, especially the potatoes, are tender. 9. Garnish with chopped spring onions and a sprinkle of sesame seeds before serving. 10. Serve hot with a side of steamed rice.
